There's an online save editor, cemu mods, and gamebanana mods that I've used on my latest playthrough. But idk about an actual trainer or what it would offer that these other options don't. it's because you used the save file that already had the maximum hearts/stamina. there is probably a separate value in the files that disables upgrading completely once you reached the maximum. just make a fresh save file and edit that instead. or just use the editor to manually give you the upgrade.
